Simple Dinner : Egg Salad

Hi friends! What’s for dinner? We had egg salad sandwiches, and they were surprisingly filling and satisfying.

I do not remember liking egg salad when I was a kid, but, if I’m remembering correctly (forgive me if I’m not) I believe my mom used Miracle Whip. I definitely prefer regular mayonnaise.

I keep our egg salad as simple as can be, using just eggs, mayo, mustard and salt and pepper.

Delicious and so easy!

To boil the eggs, I place them in the pot with cold water, then bring to a boil. As soon as they boil I take them from the heat and let them sit for about 13 minutes before peeling. I have seen this method all over the internet, so I don’t have anyone specifically that I can credit.

Then I dice the eggs, and place them in a bowl with a couple spoonfuls of mayo, mustard, salt and pepper to taste. The beauty of this is that it’s all based on how you like it. So easy!

I served with potato chips, as that was what my husband had requested. It was a very simple, but delicious dinner. We will be having the same thing tonight.

Weekend Plans

Do you have anything fun planned for this weekend? We really do not.

It’s harvest season, and as my husband is in the grain business, his working hours are extended. So he’s working at least a half day this Saturday. Then it’s just the usual stuff we do around the house. Washing the cars, and maybe doing some lawn care for one of the last time before the weather really changes.

I’m still trying to catch up on my reading list, but I definitely will not be finishing my October list which makes me frustrated, even though I knew that the chances of finishing were incredibly small.

Oh well.
